Here is a different take on the "Ham on
Easter" routine or "better than meatloaf" I
found this wonderful recipe after
I moved to Pennsyvania
(a PA Dutch recipe)

Ham Loaf

1 1/2 lb cured ground ham SAUCE:
3/4 lb fresh ground pork 10 oz. tomato soup
3/4 lb. ground beef 1/2 c. water
1 cup fine cracker crumbs 1/2 cup vinegar
1 medium onion 2 tsp. prepared mustard
2 eggs, well beaten 1 1/2 cups brown sugar
10 oz tomato soup
1 cup milk
1 tsp mustard
1 tsp sugar

Scald milk, let cool. Pour milk over crumbs and
let stand. Beat eggs and add to crumb mixture. Add
chopped onion, soup, mustard, sugar and meat.
Shape into loaf and add sauce.
Bake and 325 for 2 hours.
